About Osteria Mercatu
Osteria Mercatu is an Italian-inspired restaurant in the Netherlands, offering authentic cuisine in a modern hospitality setting. The venue is part of the Axivate Horeca Group, a Dutch group of restaurants and boutique hotels known for strong cultural alignment and unique guest experiences. As part of Axivate, Osteria Mercatu needed to embed the group’s Culture DNA while maintaining its own guest-focused identity. Leadership, onboarding, and consistent service design were essential to deliver a premium dining experience.
How Traineroo Contributed
Within the Axivate Horeca collaboration, Traineroo supported Osteria Mercatu with Culture DNA development, aligning team behaviors with the group’s values. We facilitated employee engagement surveys and delivered leadership programs to empower managers. The guest journey was mapped and optimized to ensure that every interaction reflected authenticity and hospitality. We co-created an onboarding journey to integrate new staff quickly, and through Train-the-Trainer and consultancy, we secured long-term training capacity. Together, these interventions built a motivated team and a consistent, high-quality guest experience.
